Questions

Which MP3 quality should I pick?

192 kbps suits most music and speech. 128 kbps is fine for speech when you want a small file; 256 or 320 kbps keeps music closest to the original.

How much smaller is an MP3 than a WAV?

A lot. A minute of CD-quality stereo WAV is about 10 MB; the same minute as a 192 kbps MP3 is about 1.4 MB.

Can I convert a video to MP3?

Yes, in two steps: save the video's sound as M4A with the video editor, then convert that file to MP3 here. See extract audio from a video.
